We choose not to celebrate this holiday for a few reasons. The simplest reason is that it isn't one of God's holidays.  The  other reason is it's a Pagan holiday. This holiday 's earliest origin is the Roman holiday of Lupercalia. This holiday occurred in the middle of February and was a celebration of fertility (like many pagan holidays around spring time). Lupercalia was still celebrated 150 years after Christianity was legalized in  the Roman  Empire. In the late fifth century  Pope Gelasius ended the celebration of Lupercalia and implemented Valentine's Day. They claimed it was to honor saint Valentine, however; if you analyze the practices used during Valentine's Day it becomes apparent that it's just a disguised fertility celebration.  All they really did was change the name. The main point of Valentine's Day is romantic love. Love between a man and a woman. The food and drinks consumed during this holiday are usually aphrodisiacs' used to heighten lust and fertility.  One of the most prominent symbols of Valentine's Day is Cupid who was actually a Greek god, the son of Aphrodite, that would play with the hearts of mortals. Nothing about this holiday is of Godly origin. Because of it's pagan roots we choose not to celebrate it because God clearly states that he doesn't want us to celebrate other gods or celebrate holidays like the pagans do.
